Rich, tender, and deeply flavorful — our Wagyu Osso Buco is a standout cut that transforms with low and slow cooking. Taken from the shank and cross-cut to reveal the bone and marrow, this cut is prized for its incredible marbling and melt-in-your-mouth texture. As it braises, the connective tissue breaks down into silky, savory goodness that’s perfect for hearty stews or a classic Italian-style Osso Buco.

We proudly offer two unique types of Wagyu beef: F1 Wagyu and Fullblood Wagyu. While both are incredibly flavorful, they differ in genetics, marbling, and overall eating experience. Here's a quick guide:
🔸 F1 Wagyu (50% Wagyu Genetics)
- What it is: A cross between Wagyu and premiere Angus genetics. The vast majority of Wagyu beef in America is an F1 product.
- Flavor Profile: Rich, beefy flavor with a buttery finish. Slightly more traditional "steakhouse" taste, but still much more tender and marbled than conventional beef.
- Marbling: Beyond Prime -- much higher marbling than standard beef, but less than Fullblood Wagyu. Great balance of meatiness and fat.
- Best For: People who want a premium beef experience with bold flavor and tenderness, without being too rich.
🔸 Fullblood Wagyu (100% Wagyu Genetics)
- What it is: 100% Wagyu with no crossbreeding, traceable back to Japanese bloodlines. American Wagyu Association registration paper provided for authenticity.
- Flavor Profile: Luxuriously tender, intensely marbled, and melt-in-your-mouth. A more delicate, rich flavor.
- Marbling: The highest level of Prime produced in America! Extremely high marbling, with fine, lacy fat throughout the muscle. Known for its signature buttery texture.
- Best For: A special indulgence or gourmet experience. Perfect for savoring slowly and sharing.
